Chicken Drumsticks Fry

Ingredients:
2 drumsticks
3 medium sized onions
2 chillies
2 tp jeera powder
2 tp dhaniya powder
1/2 tp turmeric
salt to taste
oil and coriander for garnish

Process:
1.Cut the drum sticks to required size horizontally and presuure cook them for one whistle along with water,salt and turmeric(more than 1 whistle makes them too soft).
2.Drain the water and keep the drumsticks aside.
3.Take a kadai put 2 to 3 tp of oil.when oli is heated,put chopped onions and chillies.
4.when onons turn golden brown,add the above drumsticks.
5.Now put jeera powder, dhaniya powder and add required amount of salt.
6.Cook for sometime untill raw smell is gone.
7.Garnish with coriander and serve with hot rice

Bananas (mashed) - 2
All-purpose flour - 2 cups

Banana fritters preparation method:
To start with this kid recipe, lets take a bowl and combine the milk and bananas in it. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine. Heat the oil in a pan and place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Boil and mash the potatoes. Boil the other vegetables. Heat oil in a pan and fry the chopped onions until brown. Add green chillies, mashed potatoes, boiled vegetables and cook for few minutes. Add chilli powder, garam masala and salt. At last add coriander leaves.  Make lemon sized balls out of this veg mixture. Make a paste of all-purpose flour and water. Mix maida in little water. Dip them in the paste and then roll them in bread crumbs. Heat oil in a shallow frying pan and fry cutlets until both sides becomes brown. Serve hot vegetable cutlets with tomato sauce.

Combine apricots, raisins, almonds, rind and grated dark chocolate in a small bowl. Roll teaspoons of mixture into balls, refrigerate overnight. Break extra chocolate into pieces, place in top of a double saucepan with butter over simmering water. Stir until smooth or microwave on high for 2 minutes. Dip each fruit ball in chocolate until evenly coated. Place balls on foil-covered trays; allow to set in a cool place. Store chocalate fruit balls in airtight container in refrigerator.

Chicken vegetable soup preparation method:-
Cook and stir chicken in hot oil in pan until browned. Add chicken broth, water, vegetables, pepper and salt. Bring to boil. Reduce heat to low; cover. Simmer few minutes.  Stir together flour and 1/4 cup water until smooth. Stir in chicken mixture and bring to boil. Cook for few minutes untill the chicken mixture is thickened. Gulab jamun ingredients:-
Gulab jamun balls:
Dry milk (khoya) - 150 gms
Indian cottage cheese (paneer) - 30 gms
All purpose Flour (maida) - 1 tbsp
Baking Soda - 1 tsp
Oil to deep fry
Gulab jamun syrup:
Sugar - 2
Water - 2
Cardamom powder - 2 tsp
Rose Water - few drops
Gulab jamun preparation method:-
First make the syrup by dissolving sugar in water. Add cardamom powder and rose water in it. Keep it aside. Mix dry milk, cottage cheese, soda, all propose flour and a little milk (if needed) to make it into a soft dough and make into small balls. Heat the oil until hot and fry the balls to a golden brown or until they are darkbrown. Soak in sugar syrup for a few hours. Garnish gulab jamun with coconut powder and serve hot or cold to your kid.

Combine flour, sugar, baking powder and cocoa powder. Mix butter, sugar and cream till smooth. Add the above cake mixture. Separate yolk & white of egg. Add essence to egg yolk & whip well and add this to the mixture. Whisk egg whites until smooth. Add little by little of egg white to the above mixture till all ingredients are blended well. Put it in a baking dish  and bake at 350 degrees for 25 min. Garnish chocolate cake with chopped nuts, almond flakes and raisins. Serve cold or hot chocolate cake as dessert.

Blend the almond into paste. Add milk and heavy cream, mix thoroughly together.In a saucepan, heat the almond mixture to a boil. Remove from heat. Mix egg yolks, sugar and safron for few minutes. Add almond milk and mix well. Heat the mixture over low heat for few minutes without boiling. Stir continuously. Then allow it to cool. Strain into ice cream maker and freeze until the ice cream is thoroughly firm. Garnish Almond ice cream with some strawberries and serve immediately.

Yoghurt - 1/2 cup (tied in cloth for 2 hours)

Ginger-garlic paste - 2 tsp
Red Chilli Powder - 1 tsp
Chaat Masala - 1/2 tsp

Paneer tikka recipe preparation method:-
Mix the yoghurt, red chilli powder, ginger - garlic paste,  salt and coriander leaves together till the mixture almost resembles a paste. Dip the paneer in the marinade and keep aside for about 30 minutes. Heat a butter in a pan and fry the paneer slices ( till brown) from all sides and keep aside. Put the remanning butter in the pan and add onion, tomatoes, chaat masala and salt to taste. Pour over the paneer tikka. Garnish paneer tikka with onion rings, coriander leaves and serve hot with sauce to your kid.

For dough:
Mix the flour, oil and salt with water to make a smooth dough. Cover with moist cloth, keep aside for few minutes.
For filling:
Peel and boil potatoes until soft. Mash coarse. Heat 3 tbsp. oil, add ginger-garlic paste, green chilli. Stir fry for a minute, add onion, saute till light brown. Add all the spices, chopped coriander leaves and salt. Fry for 2 minute. Keep aside.
Making the Samosa:
Roll out the dough into round shapes and cut in the middle. Put 1 tbsp of the filling in one end and make a nice cone. Stick the edges with a litter water. Heat cooking oil and deep fry the samosas. Do not fry on high, or the samosas will turn out oily. Serve hot samosa with tomato sauce to your kids.

Phirni recipe ingredients:-
Milk - 4 cup
Rice - 75 gms
Saffron - 4-5 strands
Green cardamom (powdered)- 7
Pistachios (crushed) - 1 tbsp
Almonds  (crushed) - 1 tbsp
Cashewnuts  (crushed) - 1 tbsp
Sugar - 6 tbsp or as per taste
Phirni recipe preparation method:-
Wash the rice and soak it in a little water for about 20  minutes. Grind the rice to make a fine paste. Keep aside. Boil the milk so that it reduces to half its quantity. Add the rice paste to this and mix well so that no lumps are formed.Add sugar and stir well. Keep on low heat for about 4 minutes. Dissolve the saffron in warm milk and add this to the above mixture. Remove the phirni from heat and sprinkle cardamom powder on top. Garnish with crushed almonds, pistachios and cashewnuts. Let phirni to cool and set in the refrigerator and serve chilled.

Boiled Potatoes - 250 gms

Cabbage (grated) - ¼ cup
Spring Onion - ¼ cup
Capsicum (grated) - 1

Spring roll recipe preparation method:-
Prepare filling for Spring roll : Heat oil in a pan. Add onions and fry till brown. Add all the vegetables,and cook till tender. Add salt, garam masala powder and black pepper powder. Do not add water. Remove from fire and keep aside.
Prepare Roll : Mash Potato with breadcrumbs or plain flour. Add butter and salt, make a smooth dough. Divide the mixture into four parts. Spread out a layer of potato dough. Spread vegetable mixture and then tomato sauce. Add grated paneer on top. Slowly roll the potato dough. Pack in an aluminum foil and steam bake (boil water in pressure cooker - keep a small container and steam the roll in it) for an hour without pressure/weight. Allow to cool, remove foil. Cut and garnish with onion rings. Serve hot Spring roll with tomato sauce.

Eggs - 3
Plain wheat flour  - 3/4 cup
Onion (chopped) - 1 large
Green chilli (chopped) - 2-3
Oil  - 5 tbsp
Salt to taste
Spices:
Red chilli powder - 1/2 tsp.
Cumin Powder - 1 tsp.
Garam Masala Powder  - 1 tsp
For garnish:
Cabbage (thinly sliced) - 1 cup
Tomato (thinly sliced) - 1
Green coriander leaves (finely chopped) - 1 tsp

Egg roll recipe preparation method:-
Mix wheat flour with water and knead it to make smooth dough. Keep aside for few minutes.  Make 4 small balls out of the dough and roll out each ball to make thin chapati. Cook the chapati one by one. Keep aside. Beat eggs and add salt and red chilli powder and beat again. Heat oil in a pan. Add green chilli and onions, fry till golden brown in color. Add this to the beaten eggs. Heat 1 tbsp. oil in a pan. Slowly pour the beaten egg. Spread evenly and let it set. Sprinkle cumin powder, garam masala and then place chapati over it. Roll the chapati along with the egg and turn upside down. Cook it for about 2 minutes.
Similarly make all the four egg rolls. Place all the four egg rolls in a serving dish. Garnish with sliced cabbage, tomatoes and green coriander leaves. Serve hot egg rolls with chilli sauce or tomato sauce. You can add boneless mutton in egg roll.

Fresh strawberries - 1qt
Sugar (powdered) to taste

Ice cream cake recipe preparation method:-
Either use purchased cake or bake an  food cake(the recipe is given below). Cut the cake in half; tear one half into small pieces and set aside.
Spread softened ice cream over cake, pressing down to smooth. Gently press the small cake pieces into the ice cream. Cover and freeze. Place slice strawberries and sugar powder to taste just before serving the ice cream cake.

Potatoes - 1 lb
Onion (diced) - 1/2 cup
Garlic (minced) - 2
Cumin powder - 2 tsp
Turmeric powder - 1/2 tsp
Yogurt (low fat) - 1 1/2 cup
Oil - 2 tbsp
Salt to taste

Potato salad recipe preparation method:-
Beat the yogurt and keep aside. In a small saucepan cook potato, covered, in boiling water for 20 to 25 minutes or until tender. Drain well, cool slightly. Peel and cube potato. Heat the oil in a pan. Add the onions and saute for 3 minutes. Add the garlic and saute for 2 more minutes. Add the cumin, turmeric and salt to taste and stir well. Add the cooked potatoes and cook for 2 minutes. Combine the potato mixture with the yogurt. Toss gently. Garnish potato salad with finely chopped fresh coriander leaves and chopped green chillies and serve chilled.

Brazilian Coffee Cookies   

Its time to welcome the New Year and say goodbye to 2010 on a sweet note. Let’s raise a toast to good times. Wishing all my dear readers and friends a blessed and peaceful 2011.
Past few days I baked loads of cookies and cakes. Brazilian Coffee Cookies being one them. All you coffee lovers will swear by them. I followed Rosa’s recipe and they came out perfect.
Brazilian Coffee Cookies Recipe
Preparation: 10 mts, Baking: 12 mts
.
Ingredients:
2 cups plain white flour
1/2 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
1/3 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 1/2 tsp vanilla essence
1 tbsp milk
1 tbsp hot water
2 1/2 tbsps instant coffee powder
1 Sieve together flour, baking pwd, baking soda and salt. Keep aside.
2 Add hot water to the coffee pwd and keep aside.
3 In a bowl, cream together butter, brown sugar and white sugar until well blended. Beat in the milk, vanilla essence and egg until light and creamy. Add the coffee mixture and mix.
4 Mix in the sieved ingredients until just blended. Cover with plastic foil and place in refrigerator for 10-15 mts.
5 Prepare small lemon sized balls and place on baking sheet that has been lined with butter paper. Place each ball about 2 inches apart as they spread. Lightly flatten the balls with a fork. Sprinkle some sugar on top of each ball.
6 Bake in a pre-heated oven at 200 C for about 10-12 mts till the edges are slightly toasted or till done. Once baked, the cookie will feel soft on touch but once cool it will harden.
7 Cool on a wire rack. Repeat with remaining dough. Store in airtight container.



Banana fritters ( Kid recipe )

Banana fritters, a tasty kid recipe. It is easy to prepare also.
Banana fritters recipe ingredients:
Milk - 1/2 cup
Bananas (mashed) - 2
All-purpose flour - 2 cups
Baking powder - 3 tsp
Eggs (beaten) - 2
Margarine (melted) - 1 tbsp
Oil - 1 tbsp
Sugar powder - 1/2 cup
Salt to taste
Banana fritters preparation method:
To start with this kid recipe, lets take a bowl and combine the milk and bananas in it. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine. Heat the oil in a pan and place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with sugar and serve this kid recipe while warm to your kid.

Place mangoes and the sugar in a food processor and process until smooth. Add whipped cream to the mango puree. Chopped vegetables (carrots, beans, peas) - 2 Cups

Garam masala - 1/2 tsp
Coriander leaves - 1/3 bunch
All-purpose flour (maida) - 1 cup

Vegetable cutlet preparation method:-
Boil and mash the potatoes. Boil the other vegetables. Heat oil in a pan and fry the chopped onions until brown. Add green chillies, mashed potatoes, boiled vegetables and cook for few minutes. Add chilli powder, garam masala and salt. At last add coriander leaves.  Make lemon sized balls out of this veg mixture. Make a paste of all-purpose flour and water. Mix maida in little water. Dip them in the paste and then roll them in bread crumbs. Heat oil in a shallow frying pan and fry cutlets until both sides becomes brown. Serve hot vegetable cutlets with tomato sauce.

Boil, skin and mash the potatoes. Add coriander leaves, chilli powder, garam masala powder, corn flour and salt and mix it. Make flat tikkis using small quantity of the mixture and roll it in bread crumbs. Deep fry the tikkis in oil. Serve this hot kid recipe of aloo tikki with tomato chutney or sauce. Spread each bread slice with butter. Spread a thin layer of cream cheese on six bread slices. Arrange the cucumber slices on top of the cheese. Sprinkle salt and pepper on it. Then arrange the tomatoes over the cucumbers and sprinkle again. Cover it with the remaining buttered slices. Serve the tomato sandwiches on a serving plate with tomato sauce. Dark chocolate (extra) - 180 g
Butter - 60 g
Chocolate fruit balls preparation method:-
Combine apricots, raisins, almonds, rind and grated dark chocolate in a small bowl. Roll teaspoons of mixture into balls, refrigerate overnight. Break extra chocolate into pieces, place in top of a double saucepan with butter over simmering water. Stir until smooth or microwave on high for 2 minutes. Dip each fruit ball in chocolate until evenly coated. Place balls on foil-covered trays; allow to set in a cool place. Store chocalate fruit balls in airtight container in refrigerator.

Chicken broth - 1 can
Chopped vegetables (such as tomato, carrot, onion, broccoli florets)
Pepper - 1/2 tsp
All - purpose flour - 2 tbsp
Oil - 1 tbsp
Salt to taste
Chicken vegetable soup preparation method:-
Cook and stir chicken in hot oil in pan until browned. Add chicken broth, water, vegetables, pepper and salt. Bring to boil. Reduce heat to low; cover. Simmer few minutes.  Stir together flour and 1/4 cup water until smooth. Stir in chicken mixture and bring to boil. Cook for few minutes untill the chicken mixture is thickened. Gulab jamun ingredients:-
Gulab jamun balls:
Dry milk (khoya) - 150 gms
Indian cottage cheese (paneer) - 30 gms
All purpose Flour (maida) - 1 tbsp
Baking Soda - 1 tsp
Oil to deep fry
Gulab jamun syrup:
Sugar - 2
Water - 2
Cardamom powder - 2 tsp
Rose Water - few drops
Gulab jamun preparation method:-
First make the syrup by dissolving sugar in water. Add cardamom powder and rose water in it. Keep it aside. Mix dry milk, cottage cheese, soda, all propose flour and a little milk (if needed) to make it into a soft dough and make into small balls. Heat the oil until hot and fry the balls to a golden brown or until they are darkbrown. Soak in sugar syrup for a few hours. Garnish gulab jamun with coconut powder and serve hot or cold to your kid.

Combine flour, sugar, baking powder and cocoa powder. Mix butter, sugar and cream till smooth. Add the above cake mixture. Separate yolk & white of egg. Add essence to egg yolk & whip well and add this to the mixture. Whisk egg whites until smooth. Add little by little of egg white to the above mixture till all ingredients are blended well. Put it in a baking dish  and bake at 350 degrees for 25 min. Garnish chocolate cake with chopped nuts, almond flakes and raisins. Serve cold or hot chocolate cake as dessert.

Blend the almond into paste. Add milk and heavy cream, mix thoroughly together.In a saucepan, heat the almond mixture to a boil. Remove from heat. Mix egg yolks, sugar and safron for few minutes. Add almond milk and mix well. Heat the mixture over low heat for few minutes without boiling. Stir continuously. Then allow it to cool. Strain into ice cream maker and freeze until the ice cream is thoroughly firm. Garnish Almond ice cream with some strawberries and serve immediately.

Mix the yoghurt, red chilli powder, ginger - garlic paste,  salt and coriander leaves together till the mixture almost resembles a paste. Dip the paneer in the marinade and keep aside for about 30 minutes. Heat a butter in a pan and fry the paneer slices ( till brown) from all sides and keep aside. Put the remanning butter in the pan and add onion, tomatoes, chaat masala and salt to taste. Pour over the paneer tikka. For dough:
Mix the flour, oil and salt with water to make a smooth dough. Cover with moist cloth, keep aside for few minutes.
For filling:
Peel and boil potatoes until soft. Mash coarse. Heat 3 tbsp. oil, add ginger-garlic paste, green chilli. Stir fry for a minute, add onion, saute till light brown. Add all the spices, chopped coriander leaves and salt. Fry for 2 minute. Keep aside.
Making the Samosa:
Roll out the dough into round shapes and cut in the middle. Put 1 tbsp of the filling in one end and make a nice cone. Stick the edges with a litter water. Heat cooking oil and deep fry the samosas. Do not fry on high, or the samosas will turn out oily. Serve hot samosa with tomato sauce to your kids.

Phirni, smooth, creamy and mouth-watering rice pudding very popular kid recipe. This recipe is very famous in North India.

Phirni recipe ingredients:-
Milk - 4 cup
Rice - 75 gms
Saffron - 4-5 strands
Green cardamom (powdered)- 7
Pistachios (crushed) - 1 tbsp
Almonds  (crushed) - 1 tbsp
Cashewnuts  (crushed) - 1 tbsp
Sugar - 6 tbsp or as per taste
Phirni recipe preparation method:-
Wash the rice and soak it in a little water for about 20  minutes. Grind the rice to make a fine paste. Keep aside. Boil the milk so that it reduces to half its quantity. Add the rice paste to this and mix well so that no lumps are formed.Add sugar and stir well. Keep on low heat for about 4 minutes. Dissolve the saffron in warm milk and add this to the above mixture. Remove the phirni from heat and sprinkle cardamom powder on top. Garnish with crushed almonds, pistachios and cashewnuts. Let phirni to cool and set in the refrigerator and serve chilled.

Spring roll recipe preparation method:-
Prepare filling for Spring roll : Heat oil in a pan. Add onions and fry till brown. Add all the vegetables,and cook till tender. Add salt, garam masala powder and black pepper powder. Do not add water. Remove from fire and keep aside.
Prepare Roll : Mash Potato with breadcrumbs or plain flour. Add butter and salt, make a smooth dough. Divide the mixture into four parts. Spread out a layer of potato dough. Spread vegetable mixture and then tomato sauce. Add grated paneer on top. Slowly roll the potato dough. Pack in an aluminum foil and steam bake (boil water in pressure cooker - keep a small container and steam the roll in it) for an hour without pressure/weight. Allow to cool, remove foil. Cut and garnish with onion rings. Serve hot Spring roll with tomato sauce.

Mix puffed rice, sev and paapri in a large mixing bowl. Add onions, tomatoes, potatoes, green chillies, tamarind paste, lime juice and all the spices. Mix Well. On a plate, serve the bhel mixture sprinkle some sev and coriander to garnish. Serve immediately.

Plain wheat flour  - 3/4 cup
Onion (chopped) - 1 large
Green chilli (chopped) - 2-3
Oil  - 5 tbsp

Red chilli powder - 1/2 tsp.
Cumin Powder - 1 tsp.
Garam Masala Powder  - 1 tsp
For garnish:
Cabbage (thinly sliced) - 1 cup

Egg roll recipe preparation method:-
Mix wheat flour with water and knead it to make smooth dough. Keep aside for few minutes.  Make 4 small balls out of the dough and roll out each ball to make thin chapati. Cook the chapati one by one. Keep aside. Beat eggs and add salt and red chilli powder and beat again. Heat oil in a pan. Add green chilli and onions, fry till golden brown in color. Add this to the beaten eggs. Heat 1 tbsp. oil in a pan. Slowly pour the beaten egg. Spread evenly and let it set. Sprinkle cumin powder, garam masala and then place chapati over it. Roll the chapati along with the egg and turn upside down. Cook it for about 2 minutes.
Similarly make all the four egg rolls. Place all the four egg rolls in a serving dish. Garnish with sliced cabbage, tomatoes and green coriander leaves. Serve hot egg rolls with chilli sauce or tomato sauce. You can add boneless mutton in egg roll.

Oil - 2 tbsp

Potato salad recipe preparation method:-
Beat the yogurt and keep aside. In a small saucepan cook potato, covered, in boiling water for 20 to 25 minutes or until tender. Drain well, cool slightly. Peel and cube potato. Heat the oil in a pan. Add the onions and saute for 3 minutes. Add the garlic and saute for 2 more minutes. Add the cumin, turmeric and salt to taste and stir well. Add the cooked potatoes and cook for 2 minutes. Combine the potato mixture with the yogurt. Toss gently. Garnish potato salad with finely chopped fresh coriander leaves and chopped green chillies and serve chilled.

An Indian Rice and Lentil Weaning Recipe for 6 Months Old Babies
Weaning is an essential part of a baby’s growing process and it is important to wean your child so that it can develop good taste buds and healthy eating habits. Weaning is basically a process where a baby is introduced to nutritious food that will substitute the milk that you will ultimately be cutting down.

Therefore, the food that you select for your baby should be highly nutritious and hence it becomes important for you as a mother to look for healthy weaning recipes that will help in the proper growth of your child. This is a healthy weaning recipe and you must try it.

Ingredients:

100g long grained rice
50g split green lentils
1 bay leaf
A few peppercorns
2 cups water
Procedure:

In water, soak the rice and green lentils in separate bowls and let soak for at least an hour. The soaked rice and lentil would have puffed up a little and also softened. Now in a pan boil two cups of water and put in the rice and lentil along with the bay leaf and the peppercorns. Cover and let it simmer for 30 minutes or until the rice and lentil are very soft to touch.

Once the rice and lentils are cooked, take off the hob and remove the bay leaf and the peppercorns and discard. Now mash the rice and lentil mixture with a masher or cool and run through the blender. This will make the mixture turn to a smooth texture with no signs of the lentil husk seen.

Spoon out half a bowl of the mixture for your baby’s feed and refrigerate the rest for the next meal. This rice and lentil recipe is very filling and will not make your baby hungry very soon.

Ingredients

500 gms of oats
4 cups of water
A little ghee to roast the oats
2 teaspoons of sesame oil
A pinch of mustard seeds
A spoon of black gram
1 small onion chopped fine
Curry leaves can be added for smell and taste.
Salt to taste
Method

The ghee is heated and the oats are roasted in the ghee and this gives a nice aroma. This is kept apart for later and then the mustard seeds are fried in the sesame oil. To the above, add the curry leaves and also the black gram. Also add the small onion that has been chopped to this and sauté them till the onion is nicely fried.

The salt water is added and when it boils, the oats is added. Stir till the water is absorbed. Remove the curry leaves before serving the upama to the baby.

The vegetables may not be very easy for the child to eat if it is boiled, so the best method of giving the good effects of the vegetables can be combined by creating soups. These soup recipes are simple to prepare and not time taking for a young mother.

This is a simple recipe for soup for babies.

Ingredients

1 small potato that is peeled and diced small.
1 small carrot that is peeled and diced into small pieces
1 medium sized beet root that is also diced
1 turnip that is peeled and diced small
1 small onion which is chopped into fine pieces.
Other vegetables that can be cut into small pieces can be added to the recipe.
Some cumin
4 cups of water.
1 tablespoon of butter.
The recipe can be modified according to the needs of the child by reducing or adding vegetables and also using ground vegetables instead of diced vegetables. The butter is melted and heated in a pan and then the cumin seeds are added to it.

To the above, add the vegetables and then add the water. The vegetables should boil in the water and butter till it is very soft.


Indian Baby Food Recipes - Chicken And Sweet Potato Curry

1 chicken breast, cut into 1" pieces.
2 sweet potatoes, peeled and diced
4 oz (1/2 cup) red lentils
one small onion, finely chopped
1 tbsp safflower oil
pinch cinnamon
pinch cardamom
pinch cumin
pinch coriander
pinch turmeric
16 - 24 fl oz (2-3 cups) water

Heat the oil and fry the onions with the cinnamon until tender.
Add the chicken and cook until golden brown.
Add the potatoes and spices and stir well.
Finally, add the water and lentils and cook for about 30 mins, until the lentils are soft. You may need to add extra water towards the end of the cooking time, to prevent the curry from becoming too dry.
Serve with brown or white overcooked rice


Indian Baby Food Recipes - Vegetable Korma
1 tsp olive oil
1/2 small onion, chopped
1 small carrot, peeled and diced
2 oz (1/4 cup) cauliflower, diced
2 oz (1/4 cup) peas, fresh or frozen
1 small white potato, peeled and diced
2 tsp unsweetened dessicated coconut
2 tsp tomato puree
4 fl oz (1/2 cup) water
pinch ground ginger
pinch cumin
pinch turmeric
pinch coriander

Heat the oil in a saucepan and cook the onion and carrot for a few minutes, until tender.
Add the tomato puree and the spices, stirring continuously and cook for 2 mins.
Add the potato, cauliflower, peas, coconut and water, then bring to a boil.
Reduce the heat, then simmer, covered, for about 20 mins.
Mash well and serve


Indian Baby Food Recipes - Chicken Korma
1 chicken breast, cut into 1" pieces
2 tbsp safflower oil
1 tbsp ghee*
1 medium onion, peeled and finely chopped
pinch ground ginger
6 whole cloves
1/4 tsp ground cardamom
1 bay leaf
pinch ground coriander
2 oz (1/4 cup) plain, unsweetened yogurt
1 fl oz (1/8 cup) water
1 fl oz (1/8 cup) milk

*Ghee is clarified butter, sometimes known as "drawn butter". It is normal butter that has been treated to remove its' "non-fat" elements. This process makes it a better cooking medium.
To make ghee, melt regular butter gently in a strong saucepan. You will see the butter-fat separating and the milk solids sinking to the bottom of the pan. A white foam will form on top - simply turn off the heat and remove the foam with a spoon. You are then left with clarified butter!

In a large frying pan, heat the butter and oil, then saute the onions for about 10 mins, until tender.
Add the cardamom, ginger, cloves and bay leaf.
Saute until the onions are brown (about 5 mins).
Slowly add the yogurt and coriander to the pan, stirring constantly.
Once the yogurt is absorbed, add the chicken and cook until golden.
Add the water, reduce the heat and simmer for 30 mins.
Stir in the milk, then remove from the heat.
Allow to sit for a while - this improves the flavour.
Don't forget to remove the bay leaf and cloves before mashing and serving with white or brown rice (overcook the rice slightly, so it is nice and mushy for baby).


Mixed Vegetable Soup
Getting babies exposed to vegetables increase the probability of them preferring vegetables in the future! Its rather important to introduce vegetables before fruits  This mixed vegetable can be given with a lot of variations given below.

Ingredients:

Potato (half)
Tomato (Quarter)
Beans (2-3)
Grated Carrots (1)
Curry leaves.
Cilantro
Method:

 Clean the vegetables.
 In a Sauce pan, cook the vegetables in water.
Add salt to taste.
Add Cinnamon for flavour.
Puree the vegetables and serve warm
Serving Suggestions:

You can also add mashed peas, cabbage and Pepper.


Fruit Recipes – Apple Puree
Variety of fruits can be given to babies.

Apple Puree – Ingredients:

 Fuji Apple ( or any naturally sweet variety)
Method:

Peel, core and chop the apples into fine pieces.
Steam cook / bring it to boil with an inch of water.
Puree the steamed apples and serve.
Combinations:

You can also combine pureed Banana, steamed and pureed Pears, Yoghurt, Avacado or any other fruit. (after the four day rule). Please avoid apple sauce if your baby constipates.

Sago Pudding / Kheer
Ingredients:

2 – 4 tbsp Sago / Javvarisi / Sabudana
1 cup Milk
Sugar to taste
Cardomon Powder
Raisins
Ghee
Method:

Clean the Sago in water and keep aside.
Bring the milk to boil and add the Sago
Cook for a few minutes until Sago looks sticky
Add Sugar, Cardamom powder and raisins.
Keep aside and serve warm.
Nutritional Information:

It is an excellent source of Carbohydrates.

Carrot Kheer – Carrot Pudding
Ingredients :
1 cup Grated carrots
1 cup Milk
*1 tsp Ghee
*Sugar
*1 tsp Cardomon Powder
*1 tsp Soaked and ground Almond powder.

Method :

Pressure cook the grated carrots with milk.
Strain the milk and mash the cooked carrots finely.
In a fry pan add a tsp of Ghee and mix the mashed carrots.
Add the Strained milk to get a fine consistency.
Add the Cardomon Powder and Almond powder.
Serve when warm.

Carrots are good source of Dietary fiber, Manganeese, Niacin, Pottassium, Thiamin,

Sooji Kheer – (Semolina Pudding)
I tried this today and Joshua loved it..

Ingredients :

3 tablespoon Semolina / Sooji
1 tsp Ghee
1 cup milk
Raisins
Cardamom Powder
Sugar to taste.
Method:

In a dry pan, roast the Semolina and then add a tsp of Ghee. (I add after roasting the Semolina to reduce the amount of Ghee used)
Mix roasted Semolina with milk and make a paste with no lumps.
Heat the remaining milk and add the paste along with sugar, raisins and cardamom powder.
Serve when ready.
Nutritional Info:

It is an excellent source of Carbohydrates and Proteins.

Note :

You can also add roasted Cashew and Almond powder to this if your baby is at least 9 month old.


Nendran Banana Porridge
Nendran Banana porridge is yet another tasty one!

Ingredients :

2 – 3 Raw Nendran Bananas
1 cup Milk
Method – To prepare Nendran Banana Powder :

Slice the raw Nendran Banana into fine pieces and dry it in shade until crispy.
Grind the dried slices into fine powder.
Store it in an airtight container.
Method – To prepare Porridge :

Take 2 – 3 tablespoons of Banana Powder and mix it with equal quantity of milk. Ensure that there are no lumps.
Heat the remaining milk and add the paste to it, while stirring continuously.
Remove from heat when it mildly thickens.
Nutritional Information:

Calcium, Chlorine, Copper, Iron, Magnesium, Manganeese, Phosphorus, Pottassium, Silica, Sodium, Sulphur.

Home made Baby cereal

Banana powder for cereal

8 semi ripe Nendran banana
The banana should not be fully ripe it should have the greenish yellow skin.

Peel the skin from the bananas. Cut each banana into 4 in the middle. Remove the seed portion from the middle. Then cut into small cubes. Wash the cut pieces and drain well. Spread on a large plate and cover with a thin muslin cloth. Dry in the hot sun for 3 days. Once dry, powder the banana in a mixie. Store powder in an airtight container. Th e powder can be stored upto 3 months.

To prepare banana cereal:
Banana powder
Boiled and cooled water
Ghee
Milk (optional)
sugar

Add 3 teaspoons of Banana powder 1/2 tsp. of sugar with 1/4 glass of water and mix to a smooth consistency. Add 1/2 a glass of milk or water and mix it well. Place on a stove and low heat. While boiling, you have to stir, until it becomes pasty, and add one teaspoon of ghee.

Ragi cereal for infants

3 dessert spoons ragi seeds
Wash the ragi well and drain. Soak ragi in boiled and cooled water for 2 hours and grind it in a mixie with 3/4 glass water. Filter this through a thin cloth. Cook the filtered liquid on a low flame till it becomes thick adding one tsp ghee and 1/2 tsp sugar. Milk/water can also be added while stirring to dilute the cereal.
The following are a few recipes that are an instant hit with children.

Ingredients:
mustard and cumin seeds
1 cup semolina
1 onion, sliced finely
ginger to taste
curry leaves
Salt, to taste
2 cups water
Proceedure:
Fry the semolina in ghee stirring continuously till it is golden colour and set aside.
Toss in the mustard seeds in ghee followed by the cumin seeds and fry till the seeds splutter fully. Add the onions and ginger and stir-fry over medium heat till the onions are transparent and soft.
Mix in the semolina, curry leaves and salt. Add water to this and mix well. Cook till the mixture is almost dry.

Potato Tikki ( Aloo Tikki)
Ingredients:
4 boiled potatoes, peeled
boiled green peas
juice of 1/2 lemon
salt to taste
2 tablespoons oil to fry the tikkis
Proceedure:
Mix all the ingredients well and make small balls. Take a non-stick pan and cook these balls in minimum oil till they become brownish in color. You could also ad 1 piece of brown bread make damp with a little water to the above.

Pizza

Ingredients:
4 tomatoes
1 onion
1 teaspoon oregano
Proceedure:
Saute the well-diced onion in butter. Mash the tomatoes and ad them to the onions. When it is well cooked mix one tablespoon of maida in water and ad it to the mixture. Ad additional water and cook for 5 minutes ad salt, oregano powder and a bit of tomato ketchup to the mixture. Keep aside. When serving ad this mixture on ready made pizza base and garnish with chopped capsicums and onions. Finally ad grated cheese. Bake this in a pre heated oven till the cheese melts and your pizza is ready. Lets hope the above recipes for kids was informative and easy to make.

VEGETABLE ROLL

Vegetable Kati Roll
Many a night, our dinner comprises of either soup, salad, wrap or sandwich. Last night I made Kati rolls with vegetable filling. I introduced the avocado based dip – Guacamole flavor to the roll which worked great as a spread and was SO delicious. Works great as a lunch box treat, one that you kid will surely relish. Makes for a complete meal and super easy to bring together.
Vegetable Kati Roll Recipe
Prep & Cooking: 30-40 mts
Makes 6-7 rolls
Cuisine: North Indian

Ingredients:
For rotis:
1 1/4 cups whole wheat flour/atta
1/2 cup maida/all purpose flour
1/2 tsp salt
water to knead the dough
For filling:
2 cups julienne mixed vegetables, beans, carrot, capsicum, beans and cabbage
1 tsp ginger-green chili paste
pinch of turmeric pwd
1/2 tsp chaat masala pwd
1 tsp Kitchen King Masala (optional)
2 eggs, beaten (optional)
1 tbsp lemon juice
2 onions, finely sliced
few tbsps of green chutney
few tbsps of guacamole
2-3 tbsps olive oil
salt to taste
1 Add salt to the wheat flour and maida, combine, slowly add water to form a soft yet slightly firm dough. Cover and let it rest till you get the stuffing ready.
2 Blanch the french beans for 3 mts and keep aside. Heat a tbsp of olive oil in a vessel, add the ginger-green chili paste and saute for few secs. Add carrots, cabbage and capsicum and saute for 7-8 mts. Add the blanched beans and saute for another 3 mts. Add turmeric pwd, kitchen king masala and chaat masala pwd and combine. Turn off heat.
3 Add the lemon juice and salt to taste and mix. Keep aside.
4 In a separate bowl, combine the raw sliced onions with 2-3 tbsps of green chutney and keep aside.
5 Beat eggs in a bowl, add salt and pepper and keep aside. (Vegetarians can omit this step)
6 To prepare rotis, pinch a large lemon sized ball of dough, dust the working surface with some atta and roll out the stuffed dough to form 6″-7″ diameter circles.
7 Heat a iron tawa and once its hot, place a parantha and let it cook lightly on both sides. Prepare all the rotis and place them in a casserole to keep soft.
8 At the time of serving, drizzle some oil on a tawa, fry the roti on one side for 4-5 secs and on top pour 2-3 tbsps of the beaten egg and flip over the roti so that the egg gets cooked.
9 Remove from tawa, place the egg coated side of the roti up and sprinkle some lemon juice on the egg coated side. Spread some guacamole or you can skip this part if you do not have guacamole. Place 3-4 tbsps of vegetable filling in the middle of the roti and sprinkle the onion-green chutney filling over it and roll the roti tightly to form a roll. To serve, wrap the lower part of the rotis in a butter paper or tissue. Enjoy!

Ingredients:
For Papdi:
1 cup all-purpose flour
2 tsp. ghee or oil
1/4 tsp. ajwain seeds (tymol seeds)
Salt to taste
Oil for deep frying
Other Ingredients:
Green Chutney & Tamarind Chutney
Cumin Powder
Chat masala
Plain Sev
Beaten fresh curd
Salt to taste
1/2 cup boiled peeled chopped potatoes
1/2 cup boiled chick peas
1 onion, chopped
2 tbsp. chopped coriander leaves
Method
For Papdi:
Mix all-purpose flour, ajwain seeds, ghee and salt.
Add enough water and knead into soft dough. Cover and leave for 30 minutes.
Divide the dough into small portions. Roll out each portion of the dough with the help of some dry flour, roll into large thin rounds. Prick all over with fork. Cut out small rounds from it with a cutter.
Fry them in hot oil until golden brown and crispy.
Drain on paper towel. Store in an airtight container when cool.
To Serve:
Crush coarsely the papdis. Spread the papdis in a large plate.
Add potatoes, chick peas and onions all over. Drizzle beaten curd over them.
Sprinkle chutneys, salt, cumin and chaat masala all over. Garnish with chopped coriander and sev.
Serve immediately.

Fresh vegetables and whole grain pasta with savory tomato sauce makes a very colorful and delicious pasta dish. This is a simple pasta dinner. Serve with a side of salad and bread.

Vegetable PastaIngredients:
Pasta:
  • 2 cups whole grain penne pasta (use can use another pasts shape if “penne” is not available)
  • 1 tablespoon olive oil
  • 1 teaspoon Salt

Vegetables:
  • 2 medium sliced carrots
  • 1/2 cup chopped green beans
  • 1 medium chopped bell pepper
  • 1/2 cup chopped cauliflower
  • 1 cup sliced mushrooms
  • 1 medium sliced zucchini
  • 2 tablespoons olive oil
  • 1 teaspoon Salt
Tomato sauce:
  • 6 medium diced tomatoes
  • 1 15 oz can of diced tomato
  • 2 tablespoons Olive oil
  • 1 tablespoon chopped basil
  • 1 teaspoon Italian herb
  • 1 teaspoon red chili flakes (adjust to taste)
  • 1 teaspoon salt (adjust to taste)
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar (adjust to taste)
Preparing Pasta:
  • 2 tablespoons Olive oil
  • 1 tablespoon chopped basil
  • 1 teaspoon red chili flakes (adjust to taste)
Method:
  • In a large pot boil the water with salt and oil.
  • After water comes to the boil add the pasta.
  • Cook the pasta until it is just tender, not too soft. Drain the water and set pasta aside.
Vegetables:
  1. Heat the oil in a frying pan over medium high heat.
  2. Add vegetables (carrot, green beans, bell pepper, mushrooms, and zucchini) to skillet and sauté until they are nearly tender.
Tomato Sauce:
  1. Mix the cornstarch in ¼ cup of water and keep aside.
  2. Heat the olive oil in a saucepan and add the basil, Italian herbs, and chili flakes stir and add tomatoes.
  3. Let the tomatoes cook until they become pasty.
  4. Next add cornstarch, salt and sugar to the tomato sauce, cornstarch will give thickness to the sauce.
  5. Next add the sauté vegetables to the sauce and cook for few minutes on medium heat until sauce come to the desirable thickness.
Prepare The Pasta:
  1. Heat the oil in a saucepan and add basil and chili flakes stir for few seconds.
  2. Next add the drained pasta and sauté for a minute until pasta is well coated with oil.
  3. Pour the vegetable sauce over the pasta, serve hot with slice of French bread and salad.
Variations:
For this recipe you need about 5 cups of vegetable, replace the vegetables to your choice.
Serving suggestion:
Serve pasta with slice of toasted bread and green salad.
Notes:
I like to serve pasta with slice toasted and spiced French bread. Before toasting the bread spread the olive oil and sprinkle basil, chili flakes and salt.

ANDHARA RECIPES


Kajjikayal Receipe:
This is a poori which is made up of maida and sooji flour. This is mainly made on some festival occasions. These pooris can be served with the chana dal or chole sabji. This is very famous north Indian type of roti.
Ingredients:
Butter (Ghee): – 4 tea spoon
Water: – 2-4 cups
Sooji  : – 100 gms
Sugar: – 80-100 gms
Maida (flour) : – ½ Kg
Cardamom powder: – 1 tea spoon
Cashews: – 15 (chopped)
Almond: – 6-7 (chopped)
Oil: – 5-6 tea spoon for frying the pooris
Coconut: – 50 gms
Method of preparation:

Take oil into the hand and then properly rub the maida into your hand.
Take a plate, take a flour of maida and also add the water into it. Make a bread of it without making it too soft.
Take a pan and add some ghee into it. Keep it on a flame and add the coconut into it. Fry the coconut until it becomes slight pink color.
Now took the coconut away and then add sooji into and roast it in the same container.
Make a powder of sugar mix cardamom powder, sooji and coconut into it. Mix it properly. Also mix the almond and cashews in it.
Now make the small circle shape pooris of the dough/bread.
Properly fold the pooris to make a shape of half moon and tranquil it properly.
Fry these pooris and server it hot.

Ugadi-pachadi – Receipe
This is a sweet chatney like tomato sauce which is especially made up of mangoes, tamarind and neem flowers. Following is the method of its preparation.
Ingredients:
Oil : – 1 tea spoon
Salt: – as per taste
Water: – 3 cups
Red chili powder: – ½ tea spoon
Mustard seeds:  – ½ tea spoon
Tamarind ball: – small lemon size ball
Jaggery: – 4 tea spoon (gud)
Neem flower: – 2 tea spoon
Raw Mango: – 1 tea spoon
Method of preparation:
Take tamarind water into a pan and add the mango pieces into it and boil it properly.
Keep it boiling till mango pieces starts tendering.
Include the jaggery and until it melts properly and become a proper mixture.
Keep it aside from the flame for some time.
Take a medium pan and add the oil into it, hit it properly. Add the mustard seeds and neem flower and fry it till its color changes to brown
Include salt and chili powder as per your taste.
Add this neem flower tadka to the mango and tamarind juice.
Now it is ready to serve.


Vankaya-Pachadi Receipe

This is another type of famous chatni in the south India and especially in Andhra. This is a very spice type of chatni made up of the spices only. Following are the ingredients of making Vankaya-pachadi
Ingredients: –
Red chilies : – 8-9 whole chilies
Green chilies: – 5-6 chopped chilies
Salt   : – As per taste
Balls of tamarind : – 6-7 small balls
Mustard seeds : – 1 tea spoon
Coriander seeds: – 3 tea spoon
Tomatoes: – 2 chopped tomatoes
Eggplants : – 2 chopped eggplants
Cumin seeds: – 1 tea spoon
Fenugreek seeds: – ½ tea spoon
Oil: – 2 tea spoon
Garlic : – 4 cloves
Curry leaves: – 15-20 leaves
Method of preparation: -

Initially take water into the glass and deep the tamarind balls into it.
Take a pan hit the oil and add he coriander seeds, mustard seeds, cumin seeds, fenugreek seeds. Also add the red chilies (whole). Keep this mixture on a head alone for 1 minute.
Take a mixer pot and grind the above mixture into a powder very well.
In the same pan of oil add the green chilies (chopped), tomatoes and the eggplants and fry it properly. Grind this mixture properly as well.
Mix the paste with the powder make in 3rd step.
Now take water and the tamarind balls in it. Riddle it and remove all the seeds to make it proper smooth pulp.
Mix this tamarind pulp into the mixture of step 5.
After this again hit some oil into the pan and put the garlic, mustard seeds and curries leaves and keeps it spluttering for some time.
Add this fry to the mixture of step 5. Now your chatney is ready.

Kammapodi Receipe
This is a type of chatney made up of mixture of dal. It contains toowar dal, urad dal and moong dal. It is a dry in nature. You can server it with some oil mixing in it and used with poori/chapatti/paratha.

Ingredients:
Cumin seeds: – 1 tea spoon
Urad dal: – 50 gms
Moong dal : – 50 gms
Toowar dal: – 100 gms
Salt: – as per taste
Red chili : – 1 whole chili
Curry leaves: – 1 stanch
Method of preparation:
Take a heavy pan. Heat it in a normal flame. Roast all the dals in it properly.
Now keep the dals aside and in the same pan add the oil and then properly fry curry leaves cumin seeds and chilies in it.
Add the above mixture into the roasted dals and the mix it properly.
Take a mixer pot and grind all the material to make a powder or it.

Vadiyalu Recipe – How to make Vadiyalu
Ingredients

1 c kali urad dal
4-5 whole red chilies (sabut lal mirch)
5-6 black pepperc
1 c Bengal gram dal
orns (sabut kali mirch)
5 cloves of garlic
Salt to taste
How to make Vadiyalu
Soak both the pulses in hot water for around two hours.
Now grind them along with rest of the ingredients into a paste and add salt.
Make small rounds on a clean cloth under sharp sun light and let completely dry.
Store and deep fry for serving.

Mamidikaya Pulihora Recipe – How to make Mamidikaya Pulihora

Ingredients
1 teaspoon mustard seeds (rai dana)
2 whole red chilies (sabut lal mirch)
A bunch of curry leaves
1 teaspoon turmeric (haldi powder)
2 raw mangoes
4 c cooked rice
1 tablespoon chana dal
1 tablespoon urad dal
How to make Mamidikaya Pulihora
Peel, grate or chop the raw mango and mix well with the rice.
Heat oil in a pan and add the lentils, mustard seeds, whole red chilies, curry leaves and turmeric powder.
Add the rice to this and mix well.
Add salt suiting to your taste and serve hot


Karapodi Recipe – How to make Karapodi
Ingredients

1 teaspoon coriander seeds (khara dhania)
1 teaspoon cumin seeds (jeera)
5 cloves of garlic
1 teaspoon tamarind pulp
1 large bunch of curry leaves
5 dry whole red chilies (sabut lal mirch)
Salt to taste.



How to make Karapodi


Heat a pan without oil and dry roast the curry leaves in it.
Now add rest of the ingredients except the salt and tamarind and roast well.
Take off the heat and grind well with the tamarind.
Add salt to your taste and store away.


Pesarapappu Payasam Recipe – How to make Pesarapappu Payasam

Ingredients

1 c dhuli moong dal
1 c jaggery, crushed
1 tablespoon ghee
2 teaspoon elaichi powder

How to make Pesarapappu Payasam


First wash the moong dal and keep aside.
In a deep, thick dish, heat ghee and roast the moong dal till you can smell a good flavor.
Now add the jaggery and let it melt.
Mix well and fry till the dal is done and it looks like a smooth mixture.
Now add the elaichi powder and mix well.
Take off the heat, garnish with grated coconut and serve hot.

Gongura Pickle Recipe   


Ingredients

1 teaspoon Fenugreek seeds, (methi dana)
1 teaspoon Coriander seeds, (sabut dhania)
1 teaspoon Cumin seeds, (jeera dana)
4-5 dry whole Red Chillies,
4 Green Chillies,
4 bunches of Gongura leaves, sepeareted, cleaned, and washed
3 teaspoon Sesame seeds,
3 teaspoon Urad dal,
2 tablespoon Oil
Salt to taste
For Seasoning
Heat 1 tbspn. oil in a pan, when it gets hot put mustard seeds.
When they splutter put 1/2 tspn. of chana dal and urad dal together and 1-2 dry red chillies.
Let them become brown in colour. Then put off the stove.
How to make Gongura Pickle
Deep fry the gongura leaves and chilies.
Grind them into a paste and keep aside.
Now roast the all the whole seeds and whole red chilies, grind and mix it with the gongura leaves. Season with salt and a fry of mustard seeds.
